    I have a 16x7, sectional garage door.  I replaced the two 1/4 × 1 3/4 × 25 inch springs with two 1/4 × 2 x 25 inch springs.i tightened them at 26,24, 22 1/4 turns and the cables keep coming off the drums and wrapping around the rod when I try and cycle it manually..

    Stiffer springs (wider diameter) likely cause higher tension, making cables slip. Consider professional help to adjust the new spring tension or replace the springs and opt for springs closer to the original size (1/4" x 1 ¾" x 25").
